With the "Running of the
Roses" Saturday, this is an opportune time to talk about Derby
Pie. Now, this pie is well-known in Louisville and thereabouts.
But most of the rest of us are in the dark about Derby Pie. Too
bad.
Derby Pie is a concoction
of semisweet chocolate chips, chocolate and walnuts encased in a
very-flaky double crust. It's sinful. It's decadent. And it's the
patented creation of George Kern and his parents, owners of the
Melrose Inn in Prospect, Ky., who came up with the recipe 40 years
ago.
Since then there have been plenty of imitators who have tried to
copy the pie, including the name, but they often find a lawsuit
brought by the Kern family waiting for them.
Now you can get the Louisville specialty in Chicago restaurants,
according to Rick Smith, a Chicago food service consultant who discovered
the pie on a trip to Kentucky and brought it back to Chicago. So
far you can find it in only three Chicago restaurants-Blue Mesa,
The Canoe Club and Zincs-but retail sales will follow. Insist they
serve it warm with ice cream or whipped cream!
